Polpette mediterranee alle melanzane / Mediterranean Meatballs with eggplant

Morbide...gustose...saporite e allo stesso tempo, molto delicate.
Non potevo che iniziare, con aggettivi positivi, per descrivere queste deliziose, piccole polpettine. Si  possono offrire con l'aperitivo, oppure come antipasto...anche se non rifiutano di essere servite come secondo piatto! A voi l'assaggio...
Ingredienti:
2 melanzane lunghe non molto grandi bio
1 uovo bio
5-6 gr. di capperi sottosale di Pantelleria
3 fette di pancarrè (compresa la crosta)
4 cucchiai di grana o parmigiano grattuggiato
latte di soia bio (o vaccino) q.b.
1 cucchiaino di prezzemolo tritato fresco
2 foglie tritate di basilico fresco bio
1 pizzico di noce moscata
sale q.b.
pangrattato per l'impanatura
olio di semi vari  bio per la frittura
Lavorazione:
Pulire le melanzane, levando il picciolo e la pelle; ridurle a cubetti.
Buttarle in acqua bollente salata, finchè sono cotte; in seguito strizzarle. In una terrina, ammollare il pancarrè nel latte di soia e poi strizzare anch'esso, ma molto bene.
A parte, sbattere le uova con le spezie e i capperi, dissalati sotto l'acqua corrente e tritati prima.
Indi, in una zuppiera, unire le melanzane, il pane, le uova e il formaggio.
Sbattere bene e aggiustare di sale.
Con le mani, fare delle palline con il suddetto impasto e passarle nel pangrattato.
Infine, friggerle in olio bollente e scolarle, con cura, su carta assorbente.

                                      Mediterranean Meatballs with eggplant
Ingredients:
2 organic long eggplants not very large
1 organic egg
5-6 gr of salted capers
3 slices of bread (including rind)
4 tablespoons of grated parmesan or grana
organic soy milk (or cow) to taste
1 teaspoon chopped organic fresh parsley
2 chopped fresh organic basil leaves
1 pinch of nutmeg
salt to taste
bread crumbs for breading
organic mixed seed oil for frying
Processing:
Wipe the eggplant, raising the stem and skin; reduce them into cubes.
Throw them in boiling salted water until they are cooked; later squeeze. In a bowl, soak the white bread in the soy milk and then wring too, but very good.
Separately, beat the eggs with spices and capers, desalted under running water and chopped before.
Then, in a bowl, add the eggplant, bread, eggs and cheese.
Beat well and add salt.
With your hands, make balls with the above mixture and roll in breadcrumbs.
Finally, fry them in hot oil and drain them, carefully, on paper towels.
